Activated Charcoal Bread (GF) with Seeds

One of my favourite ingredients to support gut health is activated charcoal, known for its ability to bind to unwanted toxins in the digestive tract and support bloating and discomfort. One of the easiest (and most delicious) ways to enjoy it is this nourishing, high-fibre bread that’s loaded with a blend of seeds, psyllium and healthy fats. It’s as supportive as it is satisfying. A beautiful client first gifted me a loaf, and I haven’t stopped making it since 🤍

Dry Ingredients:
1 cup almond meal
1 cup gluten-free flour blend
1/2 cup tapioca flour
2 tbsp activated charcoal
2 tbsp psyllium husk
1 tbsp baking powder (GF)
1/2 tsp salt

Seeds:
1/4 cup pepitas
1/4 cup sunflower seeds
2 tbsp Linseeds

Wet Ingredients::
3 eggs
1 cup lukewarm water
1/4 cup olive oil
1 tbsp apple cider vinegar
1 tbsp honey or maple syrup

Cooking Instructions:
1. Preheat oven to 180c fan-forced. Line loaf tin.
2. Mix dry ingredients and seeds together.
3. Whisk wet ingredients separately.
4. Combine wet + dry ingredients. Allow to rest for 2 minutes.
5. Pour into tin. Smooth top.
6. Bake 45-55 mins until firm and skewer clean.
7. Cool completely before slicing.
